About Gourmet Patisserie

Founded in 1985, Gourmet Patisserie has earned a reputation for excellence in luxury desserts. Under the direction of renowned pastry chef Yvon Coignard since 2005, the company has tripled in size and expanded its range of refined creations.

In 2025, Mauro Di Lieto, winner of Bake Off: The Professionals 2023, joined the team, bringing with him a wealth of experience from some of Europe’s most prestigious kitchens. Together, they lead a patisserie dedicated to craftsmanship, creativity, and consistency.

We proudly serve many of London and the South East’s finest food and beverage establishments, delivering excellence daily in temperature-controlled vehicles.

Meet the chefs

Yvon Coignard

CEO

Yvon Coignard is a classically trained French pastry chef with over 35 years of international experience. After beginning his career in Normandy, he held leading roles in prestigious hotels including Le Meridien and the Four Seasons London. In 2005, he acquired The Gourmet Patisserie, growing it into a renowned supplier of luxury desserts. A recipient of the Chevalier de l'Ordre du Mérite Agricole, Yvon is recognised for his contribution to the patisserie industry in both France and the UK.

Mauro Di Lieto

Business and Product Development Director

Mauro Di Lieto is the Business and Product Development Director at the Gourmet Patisserie, where he brings vision and innovation to every creation. Formerly Executive Pastry Chef at the Landmark Hotel London, he rose to national prominence as the winner of Bake Off: The Professionals in 2023. Mauro’s background includes roles in Michelin-starred settings and luxury hotels across Europe. He was trained at Italy’s prestigious Cast Alimenti Culinary School.
